Preparation of Anar (Pomegranate) Goli and Powder at Home

Now in early winter, we find sweet red Pomegranates in market and grocery stores. It is worth & need of hour to add it in our diet. It is valued for its medicinal properties since ancient periods. It has wide application in Traditional Asian medicines both in Ayurvedic and Unani systems.

Charak, the great medicinal physician of ancient India has prescribed a large number of formulations using almost fruit to leaf part of the plant in the treatment of dysentery, diarrhea, stomach ache, inflammation, tapeworm, bronchitis and cardiac disorders. 


Nutritional Composition of pomegranate

Pomegranate seeds have powerful antioxidants & poly-phenols which offer health of heart & anti- cancer benefits. They have more antioxidants power than cranberry juice or green tea. The edible part of the pomegranate fruit (50%) consists of 40% arils and 10% seeds. Arils contain 85% water, 10% total sugars, mainly fructose and glucose, and 1.5% pectin, organic acid such as ascorbicacid, citricacid, malicacid, and bioactive compounds. And also it is source of fibre, vitamin B, C, K & potassium.

Aanar Goli

Value addition in pomegranate products extends its shelf life, so we can exploit its medicinal and nutritive values to its fullest extent. This goli is one of the value added product and can be prepared in minutes with spices and other ingredients available in your kitchen.

MATERIAL

Ø  1 table spoon pomegranate seeds
Ø  1 ½ table spoon Sugar or Jaggery.
Ø  ¼ table spoon Amchur Powder (dried  raw mango powder)
Ø  ¼ table spoon black pepper powder (kali mirch)
Ø  ¼ table spoon cumin seeds powder (jeera powder)
Ø  ¼ table spoon black salt
Ø  ¼ table spoon lime juice
Ø  1/6th table spoon Cardamon powder (elaichi)

PROCESS

1.      Grind Pomegranate seeds in spice grinder and make fine powder.
2.      Add 1 table spoon Sugar/Jaggery in the jar.
3.      Add Amchur, black pepper, Cumin seeds, black salt, and Cardamom powder and grind for one minute.
4.      Transfer mixed content from jar to a bowl.
5.      Add ¼ table spoon lemon juice and ½ table spoon water.
6.      Mix well, knead the dough.
7.      Once mixture twins to balls take about ½ portion of it and make small balls.
8.      Transfer the balls to a bowl & sprinkle sugar or sugar powder
9.      Lightly shake the balls inside the bowl of sugar powder such that they get sugar-coated.

If you want to store it for several weeks, let it dry in shade for 3-4 days. Then transfer to an airtight container and store in cool and dry place. Have it after lunch and dinner for better digestion. Kids like this goli or candy very much, it keep them away from stomach worms.


Anardana Powder

Retention of pomegranate nutritional value intact and store it for long duration dehydration of arils of pomegranate is carried out. Pomegranate powder is easy to make at your home.

Ø  Select fresh and disease free Pomegranates
Ø  Make sure that it does not have black spot & fruit is not cracked
Ø  Remove skin of a fresh pomegranate, collect arils in bowl and sun dry or oven dry the arils for 5-6 days.
Ø  Once dried, the seed should be collected & ground in grinder
Ø  Store it in glass bottle and it can be use for 6-8 months.

 Ready-made powder is available in the market but homemade powder is always healthy, tasty and free from any unhealthy additives.

Use of Anardana Powder

·         Powder is added to curries, lentils and vegetable dishes to give it a tangy taste.
·         It is added to Indian dishes Chole & Dal tadaka, chats like Panipuri, Bhelpuri, Dahi bhalle.
·         It increases flavor of  soups & stews
·         Also used in Fish fry, Biryani, Kababs and Meat curries
·         You can use it as substitute for tamarind & Amchur while making sambhar & gravies.
·         Just sprinkle on vegetable & fruit salad, so you can feel the magical taste of it.
